FRIED MEDITERRANEAN MORAY WITH ONIONS

… to feel the beauty of the Mediterranean Sea a little closer !
Ingredients for 4 people:
• 1,2 Kg of moray cut in slices
• 1,2 Kg of onions
• Olive Oil
• 1/2 glass of vinegar
• 2/3 spoons of sugar
• Salt and pepper to taste
Cut the moray in slices, discarding the last part of the tail.
Salt to taste and put it in the fridge for one hour.
Fry the slices in boiling olive oil.
In the mean time, cut your onions in thin slices and, in other pan, let them slowly brown in oil.
Once they are cooked, add some salt, sugar and vinegar and let them caramelize.
Put your fried moray in an oven pan and cover it with the onions.
Let it stand and serve cold…with a glass of wine !
